How about John Dutton?
He redshirted with James Brown in 1993 and I guess was still here in 1994, but then he went to Nevada and had a very good career. He may have even had a pro career of some sort....was it only arena league or did he get some NFL look?
Sure wasn't Steve Clements. That guy would have been so much better off if he'd had a little patience and stayed here.

He doesn't pass the eyeball test either if you watch on a snap by snap basis.

If we're limiting it to just the player's college career I'd go with GJ Kinne. He tore it up at Tulsa.

Who was the QB that went to San Diego State? Not saying he had the best career, jsut that I recall a kid who left to go there having a pretty decent run.
