Last year's KState game at DKR was probably the best game that the Longhorn defense has played under the leadership of Manny Diaz.
What did the unit do in that contest to be so successful versus what we have been doing so far this season? Did Manny stunt and blitz a lot early in series like this year or did we play mainly base defense? If we stunted or blitzed last year, why was it so successful in shutting down Klein and the Wildcat offense and hasn't been successful when done this season?

I think we did a great job, but I think KSU was incredibly vanilla after they got in front. we had zero offense and all they did was play keep away/roll clock.

Kansas State went into a shell on purpose and because they could, not because the Texas defense was awesome.
Typical Snyder IMO. That's why he beats a Eastern Illinois 10-7 every year. When he doesn't think the other team can score he just reels it in completely on O.

Robinson and Acho were exceptional last year.
Good point. We also had a healthy Hicks, plus Kheeston Randall, Howell and Jeffcoat. Our front 7 last year was considerably better than this year. As others have pointed out, K St just kept running the ball or sticking to short passes, so Diaz wasn't tempted to twist. I rewatched the first quarter (search for Texas vs Kansas St 2011 on YouTube) and there were no twists, although there were blitzes.
